Bara Brith Pudding
2 large bara brith
8oz farmhouse butter
2 pints double cream
8 eggs
4 fl oz Welsh honey
Clotted cream to decorate
Method
1. Slice the bara brith and cut into triangles then add the butter and honey
2. Wisk the eggs with the cream
3. Pour over the bara brith
4. Bake in a medium oven for approx 45 mins
5. Remove and allow to rest
6. Divide onto four plates and serve hot with clotted cream, sprinkle with orange zest and dust with icing sugar
